Corned Beef and Cabbage…Sandwich?
I gotta say Saint Patrick’s day is the single most undervalued holiday. Everyone loves corned beef and cabbage, potatoes and a good cold beer. Not to mention, Irish American is the second largest ancestral group in all of the United States with just under thirty seven million members.
I thought this March I would try a new twist on a traditional favorite and make my corned beef and cabbage into a grilled sandwich. It was excellent…and easy to pack for lunch or a meal on the go. Try out the recipe below, and let us know how you liked it!
Ingredients
- 1 1/2 cups cabbage, finely shredded
- 3 tablespoons mayonnaise
- 1 tablespoon horseradish sauce
- 1 teaspoon caraway seeds
- 3 tablespoons butter, softened
- 3 tablespoons Dijon mustard
- 6 slices marbled rye bread
- 6 slices canned corn beef or leftover corned beef
- sliced Swiss cheese
- butter for grilling sandwiches
Directions
- Blanch cabbage in lightly salted, boiling water about 1-2 minutes.
- Drain well, spread out on paper towel to get rid of extra moisture.
- Mix cabbage with mayo, horseradish and caraway seeds.
- Butter outside of 3 pieces of bread, place on griddle on medium heat.
- Spread mustard on inside of each slice. Top with about 1/4 cup cabbage mixture, slices of corned beef, and slices of Swiss cheese.
- Top each sandwich with 2nd slice of bread, butter the top.
- Grill on griddle (or Panini press) until browned (3-4 minutes).
- Flip and grill other side, until browned and cheese is melted.

It’s that time again when we can’t help but get drawn in, adrenaline pumping from the comfort of our couches. Time to watch athletes from all over the world jump, slide and skate their hardest…all hoping for that coveted medal. That’s right, it’s Winter Olympics time. Four years ago in Torino a nation looked on as Sasha Cohen tumbled her way into a silver medal, Apollo Ohno impressed us all with a gold, and the United States came in second to Germany in the medal count. This year, it’s on to Vancouver for what’s sure to be some great sports.
King Employees are buzzing with the excitement of the 21st Winter Olympic Games. They were asked, “What is your favorite Winter Olympic Sport?” Here are the results:
Ice Hockey came in 1st with 36% of the vote. Downhill Skiing and Ski Jumping tied for 2nd place, each with 18% votes. Finally, 3rd place was shared between Bobsled, Figure Skating, and Snowboarding, each with 9%. Sorry Apollo…no speed skating fans here! Maybe in 2014 someone will have a change of heart…

New! GTSR™ Grease Tube w/Yellow Nut

DryConn® GTSR combines a yellow nut with a grease tube for waterproof connections. Splice wires with the UL Listed, flame retardant nut. Next, insert the splice into a tube filled with petroleum grease that never hardens. The grease keeps connections waterproof and corrosion proof, while the lid and long tube provide strain relief to help maintain secure splices. Manufacturer approved for direct bury, GTSR does not require a junction box for use in underground irrigation applications. It is also well suited for low voltage landscape lighting systems up to 50V. The yellow nut covers a variety of wire combinations between #18 – #10 AWG.
